According to Dr. Chima Oji as reported in the Guardian, he noted several cancer causing food materials, among them: Egusi, ogbono and our one and only Isi-Ewu. Chei! Chineke God, na wa o. Read on.

Sunday, April 29, 2001 Author Warns On The Menace of Cancer

AN expert on cancer, Dr. Chima Oji, has warned that cancer is spreading with greater ferocity than the AIDS epidemic.

In his new book "Oral Cancer", Oji blames environmental factors, notably junk Western foodstuffs like the highly-sugared and coloured bread, tinned food, tobacco, alcohol, food that have been stored for a long time like egusi and Ogbono - which attract fungus.

Dr. Oji also blames pesticides like DDT which are used to kill weasels and ants in beans, radiation emitted from poor-quality television, social stress arising from the political and economic uncertainties in the country and stress caused by lack of basic infrastructural facilities such as water, electricity, fuel - all representing sources of cancer.

He has bad news for the Ibos - who have adopted the ISI EWU palate as a cultural gourmet's delight. "Highly cancerogenious", says Oji. "The practice of burning goats with rubber tyres in order to remove the hair is very dangerous - a highly infectious source of cancer. Those who eat goat-head or any form of meat burnt with rubber tyres are poisoning themselves".

Oral Cancer is the first and only book so far on this topic written and published in Nigeria by Nigerians, dealing with the alarming increase of cancer in general and oral cancer in particular. It is illustrated lavishly with horrendous photographs of real-life cancer victims.

Explains Dr. Oji: "The old Chinese used to say that 'one picture is worth a thousand words'. So, to save a thousand words, I have inserted ample illustrations".

Oral Cancer will be graced with a high-powered launching next month at the International Conference Centre, Abuja.

Does this doctor mean all our foods are now contaminated and exposed to these viruses as a result of the way they are prepared for consumption? What's the alternative, now? Keep eating oyibo food? Na Wa o.

I think the doctor is more concerned about the cancer-causing agents contained in the tires which are used by some people to burn the skin of the goat.
At home, we use the fire woods to burn off the skin. It is safe. Over here in the US where I am, they use gas fire to burn off the skin, so I don't really know how safe that method is. As for egusi and ogbono, its best to store them in the fridge/freezer. Its also safer to cook them very well done.

Wacko,
Here's a recipe for is ewu. I hope you have an African store in your area where you can get the home ingredients. The goats here are generally okay, especially, the burnt ones.

For is ewu preparation
---------------------------------
4 cups of water
1 goat head, cut to cooking size
1 tablespoon akanwu/nnu-anwuru (calcium carbonate)
2 teaspoon cayenne pepper
2 cubes of maggi
i teaspoon salt
2 tablespoon utazi (bitter herb)
1 teaspoon nchuanwu (African basil)
2 tablespoon sliced onions (optional)
1/4 cup crayfish (optional)
1/2 teaspoon rosemary herb (optional)
1/4 cup red palm oil

Cooking Instruction
-----------------------------
Put the isi ewu in the pot . Add water, salt and, onions.
Bring to a boil. Cook for 45 mins to an hour. Reserve 1/2 to 3/4 cup of the meat stock.

In a blender, grind akanwu, cayenne pepper, maggi cubes, utazi, nchuanwu, crayfish, palm oil, and the reserved meat stock, for 2 mins. It will be semi thick in consistency.
Pour the ground contents into a pot/deep container. Add the cooked isi ewu and mix thoroughly. Add more salt to taste, if desired.

Dish out in a bowl and enjoy with your favorite drink...palm wine, raffia palm wine, beer, or the strong spirits.

I hope you'll find this useful. Goodluck, happy chef!

Ugali, Paul, Amucha, Wacko,
Thank you all for your compliment.

Amucha,
No, I'm not a chef. But I have a love for cooking that from time to time I dedicate entire evenings or afternoons cooking variety of food...both African and international, that comes to mind.

Egwuatu,
Thanks. It depends on where you are. I could fix your favorite food/soup and have it sent.
I'm not sure how these oyibo courier/delivery services handle soups/stews/isi-ewu. (Laugh).

Amanda,

you just ignored Bature's concern. Why now? Being Nigerian the bobo wants to know what to do given the epileptic power supply they enjoy.

Bature my brother,

I think I can help out: Where she says blend, you can change it to "pound". Also you may have to be flexible with the time since you a likely to be cooking with fire wood and not gas on which Amanda's instruction is based.

Good luck and let us know how you get on.

Ohafia,
Thanks for adjusting the recipe for Bature...to suit his Naija style cooking equipment.

Hmm....are you sure Bature is interested in preparing isi-ewu, ndigbo style? For all we know, he already has a Fulani style of fixing it.

Yeah Amanda,

You can call it Biafra and pattern it after the macdonalds and burger kings of this world. I don't mind being your rep in the Uk and Europe.

How does that grab you?

Ifeanyi, Ohafia, ganiyu,
Thanx. You gonna spoil me rotten with all these compliments.
Now that you guys have whetted my interest in opening up a restaurant business, I'm thinking about it.

Ohafia,
Sounds like music to my ears! Could we team up and make it a corporation?
You'd be the CEO for UK/Europe. How's that?

Ifeanyi,
How about being the CEO for the Americas?
I'd take care of Africa.

Ganiyu,
Sure, anytime.

If we had to abstain from every kind of food linked to one disease or the other we would have nothing to eat except possibly grass.
